Baking Rachel's Famous Banana Bread with @rachlmansfield

We had an incredible time baking Rachel's Famous Banana Bread with the Queen of Clean Eats herself. We used lots of delicious, healthy and all natural ingredients to make gluten free mini banana bread loaves!

Rachel is a recipe developer and "dessert enthusiast" who believes we should always be able to treat ourselves to something sweet as long as its made from the best ingredients.

Rachel Mansfield’s Famous Banana Bread

Ingredients

Yields 6-8 mini loaves

  • 2 ripe bananas
  • ¼ Cup yogurt (dairy-free for vegan loaf)
  • 1 Eggs (or flax eggs for vegan loaf)
  • 1/3 Cup melted coconut oil
  • 2 tbsp Wedderspoon Honey
  • 1/3 Cup 88 Acres Maple Sunflower Seed butter
  • ½ Cup nut milk 1 tsps vanilla
  • 1 ½ Cups oat flour 1 tsps cinnamon
  • 1 tsps Baking Powder
  • 1/3 Cups Dark Chocolate Chips (dairy-free for vegan loaf)

INSTRUCTIONS

  1. Preheat oven to 350 degrees and grease loaf pan with coconut oil
  2. In a large bowl, mix together mashed bananas, yogurt, creamy nut butter, flax egg or egg, milk, coconut oil, honey, and vanilla extract
  3. Mix well, then add in rolled oats, flour, cinnamon, and baking powder
  4. Fold in dark chocolate chips, then pour into bread dish
  5. Bake in the oven for about 10-15 minutes
