Cooking with @leahitsines

We had the best time hanging out with Leah Itsines at her exclusive cooking event at Feastly in the Newberry lofts. We made gluten-free burrito bowls and pasta salad using ingredients by Eden Foods. We love Eden Foods—they’re the only brand that pre-soaks their beans before they’re canned!

A little background on Leah if you’re not familiar—she believes in a healthy approach to eating called ‘B.A.R.E’, which stands for balanced and realistic eating. We love her blog—it’s filled with everything from cooking tips to yummy recipes to reasons why it’s ok to eat pasta!

Leah spent time cooking with us and answering all of our questions. Here are some insights she shared:

What types of recipes do you find people respond to the most?

About a year ago, I tried to make the recipes super refined and realized that wasn’t the way people were cooking. Now that I’m much more balanced I’m able to give people that stability. So I’ll look at pasta but I’ll add veggies and make a much more healthier version of that. The recipes that are healthier versions of what people love are what people respond to for sure.

What’s your favorite recipe that you’ve made? Or one of your favorites?

It’s very hard, but I think the one I always come back to is spinach and ricotta cannelloni. I always go back to making that! But the recipe that I’m dying to go eat is rice with this spicy beef mix. It’s the simplest thing ever. It’s on my website. I don’t know why but I just love it. It is like the best thing!

A favorite healthy dessert?

I don’t do healthy desserts! If you want it... just have it. It’s not the end of the world!

I’ve never been to Australia before. So where would you suggest someone go if they came to visit?

Sydney is really cool. It’s very much like LA. It’s got loads of attractions and beaches but you definitely have to come in the summer!

Are you self-trained? Are there any types of food you’d like to learn?

I’ve done some food hospitality courses but I’ve learned the most from my mom and my grandma. I love Thai food...cooking with fresh herbs, but I don’t know how to cook Indian food. I’d love to learn more about that, go there and see how they make it!
